So, I recently became completely addicted to This Blog. And she posted a recipe for a Carrot Cake a few weeks ago. I made it this weekend... It was AMAZING! Thought I would share. For the full illustrated instructions, Go Here...

Sigrid’s Carrot Cake
Cake:
2 cups sugar
1 cup vegetable oil
4 eggs
2 cups all-purpose flour
1/2 teaspoon salt
1 teaspoon baking soda
1 teaspoon baking powder
1 teaspoon ground cinnamon
2 cups grated carrots
Mix sugar, oil, and eggs. Sift together flour, salt, baking soda, baking powder, and cinnamon. Add to first mixture and combine. Add carrots and mix well. Pour into a greased and floured (or Baker’s Joyed) pan (Bundt, sheet cake, 9 x 13 Pyrex) and bake at 350 until done, 25 to 50 minutes, depending on the pan you use. Cool completely.
Icing:
1 stick (1/4 pound) regular butter, softened
1 package (8 ounce) cream cheese
1 pound powdered sugar
1 cup pecans, chopped finely
2 teaspoons vanilla
In large bowl, cream butter and cream cheese. Add sugar and vanilla and blend, then mix in the nuts. Spread on cooled carrot cake.
Eat. Faint. Repeat as needed.

Saturday
Yesterday, Saturday, Josh and I (and our friends Christy and Scott) went up to my parents property to "help" them build their garage up there. They were framing a wall, and we helped them raise it. It was actually a nice relaxing day, spent reading a good book in front of a huge bonfire. =)
Our dog Stella had a good time there as well. There were so many different smells, and so much to see! My brother and his Fiance brougt their dog too, an energetic boxer/pit bull mix. He is so cute. But him and Stella ran around, rolled around and played. Oh, did I mention that Stella is White, and the dirt up there is red? Yeah...
This is her after we got home.... notice the lovely reddish tint and the black smudges, including the one below her eye, Haha, and the red paws. She was a mess.

So, today, we gave her a bath. She Hates baths. It took both Josh and I. But we managed to get her mostly clean. This is her still mostly wet:

She got a bone today as a treat. She devoured the WHOLE thing. This should have lasted at least a few days. lol.

Can I get some Sudafed, please?.....
So for like the past week or so, I have had some sinus pressure, runny/stuffy nose, and dental pain! yeah... dental pain, weird, huh? I called my mom, who is in Nursing school, and she said that sometimes sinus pressure can cause dental pain, so I figured that that is what is causing it...
Now, when I say Dental Pain, it sounds pretty simple. What I really mean is... My whole left side of my mouth hurts. My teeth are sensitive to everything, and I feel like I have a massive toothache that is not just one tooth. I have been living on Tylenol.
So today, I decided to go onto WebMD, and looked it up... sure enough... looks like I may have acute sinusitis. (maybe not quite acute yet, but the symptoms all fit... including dental pain.) I wish we had medical insurance, cause then I could just go to the doctor, get a prescription, and hopefully be done with it. But we don't, so I get to suffer. Hopefully it doesn't get worse...

My Birthday, Easter and the Week ahead...
Well, we had a good weekend. =) Thursday night, BJ Hill Stayed at our place. Check out his website, he is Walking across America... Crazy! =) But it was cool, he is a pretty neat guy. and then Friday, I ran some errands with him, and helped him get some things done. (He took a day off from Walking)
Then Friday Night, we headed to my parents house in Manteca, CA. Saturday was My Birthday, and in the morning, my Dad and Josh changed the oil in our car because I was way overdue. Then my mom and I went shopping. She found a dress for my brother's wedding, and I found nothing. Kind of a bummer. was looking for shoes or a dress. Oh Well. Then Sarah and Sarah came over that night and we hung out and watched a movie.
Sunday we went to Easter service with my whole family, and then came home and hung out at home for most of the day, ate Ham and Potatoes and yummy stuff, then we headed home around 5.
got home about 8:30, watched some tv, then went to bed. fun fun ;-)
So this coming weekend, we are going to try and go meet with an air force recruiter and talk with them about Josh joining, and what we can get out of it, what Josh could do, etc. Then we will go to The Mens Warehouse so Josh can get fitted for his tux for my brother's wedding. We will probably take Stella to the dog park too.
Anyways, if anything exciting happens, I will update!

Me? A military wife? hmm....
well.... maybe!
My wonderful husband has been talking lately about possibly joining the Air Force. I am totally fine with this... I think...
There are a lot of benefits to him joining the air force:
1.) They would pay off Josh's student loans. (Too bad they wouldn't pay mine!)
2.) We would have medical, dental, vision, etc...
3.) Shopping tax-free on base
4.) free travel!
5.) Free housing or at least C.O.L.A. (cost of living allowance)
6.) food and clothing allowance
7.) Decent pay
8.) Sign on Bonus possibility!
9.) military wifes groups
Cons:
1.) possible deployment, though less likely than with other services
2.) 6 weeks of Basic Training away from me
3.) having to move where they send us. (hmm... maybe Hawaii though?) ;-)
4.) I can't think of anything else...
So yeah, looks like the pros outweigh the cons. We will probably go this weekend and talk to a recruiter, just to see what they say, and see if Josh would be able to work on UAV's like he wants to. (and maybe get a higher rank because of his AA and A&P.
So, we will see... our lives may be radically changing.... ;-)

Exausted
On word to describe today.... Exausted. I am so tired! and I have no clue why!
Anyways, I went shopping today for a dress for my brother's wedding. I am a bridesmaid, and we are wearing black dresses. The only rules are ankle length, empire waist. I went to 3 places.. JC Penny, Mervyns and Gottchalks. Nothing. Nada. Zip.
So, I will go to a couple places in Reno on Friday... and if I can't find anything, I am ordering this:

It is Backordered till April, but the wedding isn't until the end of May. The only reason I don't order it now, is because it is kind of expensive. =)
So yeah, pray I find a dress!
Anyways... my neck hurts, and I am too tired to type anymore. Until next time... =)

I don't know if I mentioned it before, but.....
we found a church! =)
we have been going to Carson Valley Christian for a few weeks now, and since we really like it, have decided to make it our home church. Josh says the pastr almost reminds him of a Christian, nicer, Stephen Colbert. I agree. He is a great teacher, says what need to be said and doesn't fluff it up too much.
Well, I really wanted to get involved in a home bible study, and I submitted a request to the church, and within a few hours got a response from Kirsten, inviting us to join their group.
So tonight, we went to the Saturday night church service, and then to bible study. It was really cool... we both really enjoyed it, and it was only a tiny bit awkward, as it usually is coming as a new person into a new group. =) But there are some nerds in the group like us. haha (self-proclaimed, of course!)
Tonight at church, the pastor talked about the crucifixion in a way I hadn't really hear before. (And then it was continued in our bible study) He was talking about the three crosses, and the two criminals who were crucified with Jesus.
Luke 23:39-43
39 One of the criminals who hung there hurled insults at him: "Aren't you the Christ? Save yourself and us!"
40 But the other criminal rebuked him. "Don't you fear God," he said, "since you are under the same sentence? 41We are punished justly, for we are getting what our deeds deserve. But this man has done nothing wrong."
42 Then he said, "Jesus, remember me when you come into your kingdom.[a]"
43 Jesus answered him, "I tell you the truth, today you will be with me in paradise."
The first one acted just like the crowd... rebuked him and insulted him.
But the second one was the opposite. He knew he had done wrong. He knew he deserved to be on that cross. He admitted he was bad. But he knew that Jesus didn't deserve what he was getting. He knew that there was something about him, and even though he didn't know for sure, he had the faith to ask Jesus to remember him in Heaven. His faith saved him.
We need to have the attitude of that guy. We need to recognize our sins, recognize what we deserve for those sins, and admit our need to God. We need to humble ourselves completely.

I hate feeling sick....
So, on tuesday, I woke up with a stuffy nose, sinus pressure and that icky post nasal drip. (I know, gross...) and of course the headache that does with it all... It wasn't too bad, but I just felt icky all day.
Wednesday I woke up feeling like I had the flu. It wasn't too bad when I woke up, and I made myself some oatmeal, and as I was eating it started feeling nauseous. I managed to finish it, but by then I was feeling pretty crappy. I went to work, and the rest of the day managed to eat a pack of saltines. No fun. Got home and sent Josh out to buy a thermometer because I felt a bit Feverish. (Funny... he came back with a thermometer for monitoring ovulation... I gave him crap for that. Luckily it was the same as a normal thermometer. haha) I was in fact running a very slight fever (97.4.. not too bad at all) Basically I just felt like crap.
Yesterday I felt a lot better, just had the runs all day. (again, gross, I know... sorry) And today, I feel a lot better. I am just glad it didn't get any worse. =)
So tonight, we went to Qdoba for dinner... if you haven't been there, GO! It was so good! and not expensive either. ($15 for two HUGE burritos and two sodas.) It is our new favorite place to eat in Carson City. =) I highly recommend it!
Anyways, tommorrow we are taking Stella to the Dog Park in Reno that is fully enclosed, so we can let her off her leash to run. (last time we let her off her leash, she ran! haha.) So that should be fun.

Exausted and Fighting something...
So, our trip to Phoenix went well, we got there friday evening, and had dinner with Matt and Katie, and Josiah and Lauren, and Katie's Brother, Chris. We went to Carlos O'Brians. Josh got a kick out of the name...(a mexican name/restaurant, but with an Irish last name...) It was really good mexican food. =)
Then, after dinner, we went back to Matt and Katie's and watched I am Legend. It was ok... kinda sad.
Saturday we just hung out by the pool, enjoying the sun for most of the day. Got a little sunburned in the face, but luckily not too bad. Then that afternoon, we drove down to Tucson to visit Tom and Candy Massa. They were having a birthday party for Candy, so we hung out there, and had a good time, then stayed the night at their place.
Sunday morning, we left Tucson at 8:15-ish, and drove home! We lost a good hour and a half due to accidents and road construction... Stinkin I-10. :-p We stopped in San Bernadino and had lunch with Josh's friend Caleb from Hawaii. (He lives in LA now and goes to Biola) It was a quick, but nice visit... then we were back on the road, up hwy 395 to Carson City! We finally made it home around 12:30am... and we were both Exausted. I was already starting to feel a little sick... (the lovely post nasal drip thing goin on)
I woke up this morning, and my throat felt swollen, and it hurt! bleh... and I am just physically exausted and don't want to be at work. my nose is runny, my head feels stuffy, and my throat is scratchy and sore. I really hope I am not getting sick... I hate being sick. =P

A story from the road...
So, friday we got up at and left the house at 3:30am... and drove all the way to Phoenix... we made it in 12.5 hours... well, about 20 miles from Tonopah, NV when I had to pee like nobody;s business... so bad I was almost in tears. So, with no other choice, I pulled over to the side of the road, got out and squatted (apologize for the visual...) between the trailer and the jeep. I managed to go, and it felt so much better... we get back in the car, and start driving, and 1.5 miles down the road, there was a freaking rest stop! I was so pissed.....
so yeah, that was my story....
oh, and the best "that's what she said" quote....
Regarding a story they were trying to get someone to tell... "That's pretty bad if she won't even touch it drunk..." ..."That's what she said..." Yeah...
So, back on the road tommorrow for the 13 hour drive back to Carson City! Yay!

Anticipating the weekend...
well, it starts in approximately.... 18 minutes. haha. I am still at work, bored as heck, the phone has rang 4 times in the 4+ hours I have been here. I read the whole story of Baby Leino, and I am couting the minutes till I get to go home!
Tonight we are going to a short dinner at Adam and Renee's house. (mmmm....meatball sandwiches!) Then going up to Reno to pick up a trailer that we are getting paid to drive to Phoenix. =)
Tommorrow morning, bright and early, we are leaving for Phoenix. (I am hoping to leave before 5... we shall see) We will drop the trailer off at the guys house, then head off to Matt and Katie's house, and then to Dinner with Matt and Katie and Josiah and Lauren. =) I am excited to see them, especially since I haven't seen Josiah and Lauren since their wedding, and she is now like 7 Months Prego. =D Exciting!
So we will stay saturday and leave early sunday morning to get back to good old Carson City, and have to set our clocks back an hour (losing an hour of precious sleep) and then start the weekly grind all over again!
Pray for a safe and fun trip!
and don't forget to pray for The Lawrensens... she got to hold her baby for the first time since she was born yesterday! Praise God! and she is 2 months old now... can you imagine?!?

Update on the resolutions...
I am not doing that great, so I am reposting them with an update, mostly as a reminder to myself...
1. Stop Drinking Soda - because diet is just as bad for you. I am limiting myself to only when we go out to eat or special occassions. (I haven't had soda in a week... yay me!) Update: yeah right.... as soon as what we have is gone, I swear...
2. Stop Snacking between meals - this will be hardest for me... my brain is always telling me I am hungry... even when I am not. Update: still a problem, but eating a little less and trying to make better choices.
3. Go walking at least 4 times a week with at least 2 times being an hour or longer. Update: It has been too freaking cold! But the weather is getting nicer, and I actually want to go for a walk today!
4. Keep better track of our finances (and stop spending money on things we don't need! haha.) Update: Josh and I had a discussion about this yesterday, and we are sitting down tonight to figure out a budget, and we have decided to make lists using the 'wants and needs' idea. We are serious right now... money issues suck!
5. Lose weight - I want to at least get back to the pre-wedding size but better yet would be the before I moved to TN size. haha. Numbers 1-3 should help with that. update: yeah right... now the goal is to lose some weight before I have to be in my brother's wedding. I'm already going to be the biggest girl in it... :-p
6. learn how to sew - I am starting with curtains for our living room.... when you come visit, don't laugh! ;-) update: haven't started! bought the material though!
7. get my crafts business going (jewelry, card making, scarves, baby blankets) Need anything? let me know! update: eh... haven't gotten anything going yet
8. Manage to sell enough tupperware to feed my addiction. It really is addicting... they have some awesome stuff! you should check it out! haha. update: still haven't managed to sell much of anything
9. Find a good church and get involved. This should be number one. We have been slacking in this area. update: well, we found a good church! yay! and we started tithing this week! (one reason we want to get our finances in order) now onto the getting involved part...
10. Try and find a good paying job with benefits (we need benefits!!!) update: I passed one test for the state.... now I'm on the list. Maybe I should start looking harder. we need more money...
11. Be content with my life the way it is. (but not stop trying to better it in ways I am able) update: I am halfway content... need to work on bettering what I can though. =)
1. Stop Drinking Soda - because diet is just as bad for you. I am limiting myself to only when we go out to eat or special occassions. (I haven't had soda in a week... yay me!) Update: yeah right.... as soon as what we have is gone, I swear...
2. Stop Snacking between meals - this will be hardest for me... my brain is always telling me I am hungry... even when I am not. Update: still a problem, but eating a little less and trying to make better choices.
3. Go walking at least 4 times a week with at least 2 times being an hour or longer. Update: It has been too freaking cold! But the weather is getting nicer, and I actually want to go for a walk today!
4. Keep better track of our finances (and stop spending money on things we don't need! haha.) Update: Josh and I had a discussion about this yesterday, and we are sitting down tonight to figure out a budget, and we have decided to make lists using the 'wants and needs' idea. We are serious right now... money issues suck!
5. Lose weight - I want to at least get back to the pre-wedding size but better yet would be the before I moved to TN size. haha. Numbers 1-3 should help with that. update: yeah right... now the goal is to lose some weight before I have to be in my brother's wedding. I'm already going to be the biggest girl in it... :-p
6. learn how to sew - I am starting with curtains for our living room.... when you come visit, don't laugh! ;-) update: haven't started! bought the material though!
7. get my crafts business going (jewelry, card making, scarves, baby blankets) Need anything? let me know! update: eh... haven't gotten anything going yet
8. Manage to sell enough tupperware to feed my addiction. It really is addicting... they have some awesome stuff! you should check it out! haha. update: still haven't managed to sell much of anything
9. Find a good church and get involved. This should be number one. We have been slacking in this area. update: well, we found a good church! yay! and we started tithing this week! (one reason we want to get our finances in order) now onto the getting involved part...
10. Try and find a good paying job with benefits (we need benefits!!!) update: I passed one test for the state.... now I'm on the list. Maybe I should start looking harder. we need more money...

So, a friend of mine recently brought this family's story to my attention, and I haven't been able to get enough... here is the guys basic synopsis:
My name is Nathan. My wife, Tricia has Cystic Fibrosis (CF) and had been preparing for a double lung transplant until we discovered we were pregnant. Tricia is the most incredible person I've ever met. She keeps me humble and in love.
Gwyneth is our beautiful, new, baby girl, born 15+ weeks early.
Tricia is on her way back onto the transplant list, and Gwyneth is on her way out of the NICU and into our hearts.
This is our story from my perspective...
