Paleo Creamy Avocado dressing... YUM!

So When I started this Paleo diet, I was resigned to having salads with balsamic vinegar and olive oil. It is good, don't get me wrong, but after the first week, I stopped eating as many salads...

Well, I got some avocados for a good price yesterday, and as I was making me a salad with leftover chicken for lunch today, I went to go put an avocado on it, and thought "wait a minute, I saw a recipe somewhere for an avocado dressing... I should make that." And I did! And it was so delicious I was licking the spoon!

Creamy Avocado Dressing

Ingredients:

2 avocado
3/4 c. water
4 T. olive oil
2 T. lemon juice (I would start with one and taste it... I thought 2 was a little much)
1/4 t. Cayenne pepper or to taste
1/2 t. Garlic paste (can use garlic powder)
2-4 dashes sea salt and pepper

I used a hand blender to mix everything together, but you can use whatever you have available. if you need to thin it out, add some water.

Store in the fridge (great use for an old mason jar!) Should keep about a week.

I tried this recipe out on a paleo spinach salad while out camping today. I had to improvise with a few ingredients that I had on hand but overall, the dressing was delicious. Thanks for the inspiration!
